Kale & Apple Salad

Ingredients
  • 8 large kale leaves
  • 1 apple, chopped
  • ½ cup dried cranberries
  • 2 small carrots, grated
  • ½ cup feta cheese, crumbled

Dressing

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
Directions
  • Wash kale and shake dry, remove stems, and break into small bite-sized pieces.  Place in a large bowl.
  • Chop apples into bite-sized pieces, add to bowl.  
  • Grate the carrots, add to bowl.
  • Measure the dried cranberries and feta, add to bowl.  
  • Measure apple cider vinegar, honey, and olive oil, add to jar.  Replace jar lid and shake until well mixed.
  • Pour salad dressing over salad to taste, mix, and enjoy.
