Ingredients
- 8 large kale leaves
- 1 apple, chopped
- ½ cup dried cranberries
- 2 small carrots, grated
- ½ cup feta cheese, crumbled
Dressing
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
Directions
- Wash kale and shake dry, remove stems, and break into small bite-sized pieces. Place in a large bowl.
- Chop apples into bite-sized pieces, add to bowl.
- Grate the carrots, add to bowl.
- Measure the dried cranberries and feta, add to bowl.
- Measure apple cider vinegar, honey, and olive oil, add to jar. Replace jar lid and shake until well mixed.
- Pour salad dressing over salad to taste, mix, and enjoy.
