Ingredients
- 1 cup of leafy greens (such as spinach, romaine lettuce, arugula, bibb lettuce, or mixed greens)
- ¼ cup each of 3 vegetables (such as carrots, tomato, mushrooms, onions, broccoli, cauliflower, celery, green pepper, snow peas, summer squash)
- Optional: 1 topping (grapes, dried cranberries, mandarin oranges, pineapple chunks, almonds, raisins)
Dressing ingredients
- 3 tablespoons of acid (such as lemon juice, cider vinegar, or balsamic vinegar)
- ½ cup oil (olive oil or canola oil)
- ½ teaspoon of add-in (herbs, spices, minced garlic, Dijon mustard, parmesan cheese)
Directions
- Wash and combine all of the above salad ingredients.
- Measure and add dressing ingredients in a jar or plastic container and shake to mix together.
- Add 1-2 teaspoons of dressing to each serving of salad.
- Toss well to coat all ingredients with dressing.
